There is no doubt the most famous dish Segovians are the most prideful of is their beloved roast suckling pig known as&nbsp;<em><strong>cochinillo asado.<\/strong><\/em><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" <\/strong><\/p>\n\n\n\n<p><strong>It is considered a sublime delicacy from Segovia in the Castile-Leon region of Spain.&nbsp;<\/strong><\/p>\n\n\n\n<p>Segovia, a popular city not far from Madrid, is a href=\"https:\/\/www.therockysafari.com\/2023\/01\/30\/the-worlds-oldest-restaurant-botin\/\"><strong>Sevogovian cochinillo has been served at the world&#8217;s oldest restaurant, Restaurante Bot\u00edn,<\/strong><\/a> located in the city center of Madrid.<\/p>\n\n\n\n<p>Bot\u00edn has regular cochinillo deliveries from Segovia several times per week.<\/p>\n\n\n\n<figure there are <strong><a href=\"https:\/\/www.thetravelblogs.com\/day-trip-segovia-madrid\/\" target=\"_blank\" rel=\"noreferrer noopener\">very specific guidelines<\/a><\/strong> established which include what the pig can be cooked in. Traditionally, the piglet is roasted as a confit in duck fat.<\/p>\n\n\n\n<p><strong>The guidelines even go as far as specifying what the mother of the suckling pig may be fed!<\/strong><\/p>\n\n\n\n<p>Dozens of restaurants all compete in Segovia claiming to serve the best cochinillo.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" has compiled an excellent list comparing different spots where you can order cochinillo in Segovia.<\/strong><\/a><\/p>\n\n\n\n<p>On average, cochinillo will <a href=\"https:\/\/spainlikealocal.es\/best-cochinillo-segovia-suckling-pig\/\"><strong>cost around 27 Euros per person.<\/strong><\/a><\/p>\n\n\n\n<div class=\"wp-block-group\"><div href=\"https:\/\/twisttravelmag.com\/day-trip-segovia-spain\/\" target=\"_blank\" rel=\"noreferrer noopener\">Twist Travel Magazine.<\/a><\/strong> The travel blog <a href=\"https:\/\/wherearethosemorgans.com\/segovia-day-trip-guide\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Where Are Those Morgans<\/strong><\/a> recommends <strong><a href=\"https:\/\/paulinaontheroad.com\/day-trip-from-madrid-to-segovia\/\" target=\"_blank\" rel=\"noreferrer noopener\">Jos\u00e9 Maria Restaurant<\/a><\/strong> and Mes\u00f3n don Jimeno. <\/p>\n\n\n\n<p>My friends and I chose to have dinner at <strong><a href=\"https:\/\/www.restaurantemaribel.es\" target=\"_blank\" rel=\"noreferrer noopener\">Asador MARIBEL milk-fed only, no more than 3 weeks old, and from a mother pig who adheres to a very strict diet. It&#8217;s no wonder cochinillo from Segovia is famous all over Spain!<\/p>\n\n\n\n<p>Sometimes a ceramic plate will be used to cut apart the pig to showcase its tenderness.<\/p>\n\n\n\n<p>Our visit to Asador Maribel was lovely! We tried <em>patatas panaderas<\/em> (which you can see in the video below after the waitor serves us individual plates of cochinillo!) \ud83e\udd29<\/p>\n\n\n\n<figure class=\"wp-block-video\"><video that Spaniards eat all parts of the pig. It&#8217;s sort of a running joke that in Spain, no part of the pig goes to waste!<\/p>\n\n\n\n<p>What I had not realized until my visit to Segovia was the level of complexity, skill, and regulation that can go into preparing a single type of dish! One of the very few souvenirs I can say I have purchased while traveling.<\/p>\n\n\n\n<p><em>A note: I want to give special thanks to my great friends from Madrid who all made this day trip possible. To Kiyoko &amp; Enol who kindly offered to drive me there in their car, acted as tour guides, offered stellar recommendations, and also to Satomi who made the day very enjoyable while touring!
